Hello friends, it’s weekend again and i am thoroughly enjoying cooking with my Mealthy Multi Pot. For those who have just joined the series let me first tell you that I have collaborated with Mealthy India to do a series of recipes using their amazing Multi Pot. This is our fourth recipe of the series and earlier we have done Saffron Rice Kheer, Mutton Korma & Dum Aloo in Multi Pot. Check out the recipes and do share your thoughts with me in comments below. Coming to today’s recipe, i have tried making Udipi Style Avial in Mealthy Multi Pot .
Avial is a steamed mix vegetable and coconut recipe that is a quintessential dish in South India. Their are few basic vegetables that goes into the recipe…apart from them you can add more if you want. I like to use Potatoes, Drumstick, Carrots, Beans, Ivy Gourd, Raw Banana and some Pumpkin in my Avial recipe. You can also add Yam if you like. I have already posted a Kerala Style Avial recipe in my blog before and the main difference between both recipes is the use of curd. In Kerala Style Avial curd is not used where as in Udipi Style Avial there is a distinctive use of curd that gives it a pungent flavor.
A little about Multi Pot :
Multipot is modern kitchen appliance that is electronically controlled and works as combined pressure cooker as well as slow cooker. The multipot comes with an electronic center panel that has some manual as well as preset modes of cooking. To make Udipi Style Avial in Mealthy Multi Pot first collect sliced coconut, green chilies and cumin in a grinder jar and add water to grind into a fine paste. Keep aside.To make Multi Pot Avial :Turn on your Multi Pot at ‘Saute’ and heat oil. Add curry leaves, whole red chilies, mustard and a pinch of asafoetida. Wait for 2-3 seconds and add vegetables into the pot and stir. Add turmeric powder, adjust salt to taste and add coconut paste into it. Mix well till everything gets incorporated and then add water and give a quick stir again. Secure the lid, close the pressure valve to ‘seal’ and cook for 5 minutes at ‘pressure cooker mode’ on high. Open the valve to quick release the pressure. Be careful while the steam releases. Open lid, stir in the whisked curd and drizzle some coconut oil on top. Serve hot as a side dish with Sambhar and Rice.

- 1 Diced Cucumber
- 1 cup Diced Pumpkin
- 1/2 cup Chopped Beans
- 1 drumstick chopped into 2 inch pieces
- 1/2 cup Sliced Ivy Gourd/ Kundru
- 1 cup Fresh Sliced Coconut
- 2-3 Green Chilies
- 1 tsp Cumin seeds
- 2 tbsp coconut oil plus 1/2 spoon additional
- 1 pinch Asafoetida / Hing
- 1-2 sprig Curry leaf
- 1 tsp Mustard seeds
- 2 Whole red chili
- 1 tsp Turmeric Powder
- Salt to taste
- 1/2 cup curd adjustable
- 1 cup water
