Chicken Chettinad | Chettinad Chicken Curry

Chettinad Cuisine from Tamil Nadu is one of spiciest cuisines in India and Chettinad Masala is a robust spice mix used to make this cuisine, both veg and non veg. Chicken Chettinad is a classic Indian recipe, from the cuisine of Chettinad. It consists of chicken marinated in yogurt, turmeric and a paste of red chillies, kalpasi, coconut, poppy seeds, coriander seeds, cumin seeds, fennel seeds, black pepper, ground nuts, onions, garlic and gingelly oil. I have skipped all the above spices and used Chettinad Masala by Old Fashioned Gourmet. How to make Chettinad Chicken Curry :

Marinate chicken with yogurt, chettinad spice mix and salt for 30 mins in refrigerator. Heat oil in a wok and add cumin, dry red chili, green chili and curry leaves and let them splutter. Now add desiccated coconut and dry roast for a minute until light brown or golden. (don’t let it burn) Now add finely chopped onions and fry until they sweat. Add ginger garlic paste now and fry all till oil starts leaving sides and the raw smell goes off. Take the marinated chicken and add them all into the masala and give a nice mix. Let the chicken cook on medium to low flame until curd reduces and oil starts leaving sides. Adjust salt as per taste. Add some water to make a thick curry and give a boil. Now simmer the flames and let the chicken cook with lid closed. Once the chicken in cooked, turn off the gas and garnish with some fresh curry leaves for aroma. Your Chettinad Chicken Curry is ready to serve with Roti, Parota or Rice.

Recipe Notes
  • If you don't have curd to marinate, you can skip this step and add finely chopped tomatoes in the curry along with washed chicken pieces and chettinadu masala separately as seasoning.
  • The quantity of chettinadu masala is adjustable as per your liking. Usually the curry is spicy and hot, but you can adjust the flavors as per your choice.
