Corn And Beetroot Patties

by Shaheen Ali

For all these years I have been trying to come up with recipes that can be enjoyed by kids specially as i find it difficult to please them. There are enormous recipes that are specially curated for kids but again not every recipe are liked and approved by them. I personally believe kids like dishes that are colorful and where they can’t make out the ingredients that went in to make the dish. Well in a way it’s good because that’s the only way we get to feed them vegetables etc. Corn and Beetroot Patties is one such recipe that i had curated for my son and thankfully it got approved and he asks me to make it more often now days.

But before coming to the recipe let me just share something important. For those who have been following me since long must be aware that Borosil India has collaborated with me to promote their products and I had been doing so for quite a long time now. We have grown up seeing our Mom using Borosil glassware, lately they came into kitchen appliances which i had blogged about earlier. Check out the Borosil Nutri Fresh Grinder and Borosil OTG.

Corn & Beetroot Patties

Coming back to the recipe… I made these crunchy Beetroot and Corn Patties in Borosil Cook Fresh Fry Pan. To make this easy snack recipe first collect all ingredients in a bowl (boiled potato, grated beetroot, corn kernels, coriander, chopped mint, garam masala powder, cumin powder, red chili powder and salt as per taste and mix well to combine into a soft dough. Refrigerate the mix for 10 mins to get firm. In a separate bowl mix water and cornflour to make a slurry. To make beetroot and corn patties, pinch a large lemon sized portion from the dough and flatten between the palm to shape into a patty. Meanwhile heat around 2-3 tbsp of oil in fry pan. Dip the prepared patty in the slurry and immediately transfer it on breadcrumbs and gently coat it. Place the patty on the fry pan and shallow fry from both sides until crisp. Place the fried patty on a kitchen napkin to soak excess oil and serve hot with your favorite dip or ketchup.
