Pumpkin and Peanut Sabzi

Pumpkin and Peanut Sabzi is a delicious vegetarian recipe made with ripe pumkins and ground peanuts with a prominent flavor of garlic. I’m not a pumpkin fan but this recipe by Chef Shazia Khan is a keeper. I’ve been loving this recipe so much that nowdays we often make it on weekends and enjoy this delicacy with hot and fluffy Rotis.

Do you know, that pumpkin offer vitamin Cvitamin E, iron, folate and all of which strengthen your immune system. More pumpkin in your diet can help your immune cells work better to ward off germs and speed healing when you get a wound. For all these years I’ve found pumpkin as a boring vegetable with blant flavors, until I found this lip-smacking recipe. Pumpkin and Peanut sabzi has all my heart and im absolutely in love with the array of flavors this recipe has to offer. From sweetness of pumpkin to the bit of peanuts, this recipe has a robustness that tastes best when paired with ghee and chapatis.

Making Peanut Masala

Dry roast peanuts and remove skin. Like wise, dry roast whole red chilies and let them all cool. Now collect peanuts, red chilies and garlic cloves in a grinder jar. Coarsely grind and keep aside for further use in recipe.

Making Pumpkin And Peanut Sabzi

In a pan, heat oil and add onions and fry until golden. Add ginger garlic paste and fry until aromatic. Add chopped tomatoes, chili powder, turmeric and coriander powder and fry until tomatoes soften. Add pumpkin cubes and saute. Add salt and cook till the pumkin is soft and mushy. Add peanut masala to the cooked pumpkin. Garnish with freshly chopped coriander leaves and serve hot with rotis.

  1. In a pan, heat oil and add onions and fry until golden.

  4. Add pumpkin cubes and saute. Add salt and cook till the pumkin is soft and mushy.
  5. Coarsely grind the peanut masala ingredients and add to the cooked pumpkin.
  6. Garnish with freshly chopped coriander leaves and serve hot with rotis.
