Samosa Chaat | How to make Samosa Chaat

Samosa Chaat is an extremely flavorful snack that is among some of the most popular street foods in India. Commonly served by vendors on street, Samosa Chaat is loved by all the Chaat lovers. For making one plate of samosa chaat, just break 1-2 samosa roughly and add choley to it. Add some curd, green chutney, tamarind chutney and season with some red chili powder and chaat masala. Serve with some chopped onions, green chilies, coriander and sev on top to give the chaat not just a beautiful look but also a great texture and flavor.

What is a Chaat ?

Chaat basically is a very broad term and has no particular recipe to define. There are various chaat recipes made that differs from person to person. Every region has it’s own distinctive chaat preparation. Chaat is basically a savory snack that originated in India, typically served as an hors d’oeuvre at roadside tracks from stalls or food carts across the Indian subcontinent in India, Pakistan, Nepal, and Bangladesh. With its origins in Uttar Pradesh, India, chaat has become immensely popular in the rest of the Indian subcontinent.

Delhi, being the food capital of India is claimed to serve the best chaat in the country. Mainly because of the chutneys and the seasoning that goes into it. The chaat variants are all based on fried dough, with various other ingredients. The original chaat is a mixture of potato pieces, crisp fried bread dahi vada or dahi bhalla, gram or chickpeas and tangy-salty spices, with sour Indian chili and saunth (dried ginger and tamarind sauce), fresh green coriander leaves and yogurt for garnish, but other popular variants included aloo tikkis or samosa (garnished with onion, coriander, hot spices and a dash of curd), bhel puri, dahi puri, panipuri, dahi vada, papri chaat, and sev puri.

How to make Samosa Chaat ?

Out of many Chaat variants, Samosa Chaat happens to be one of the most favorite Chaat after Aloo Tikki Chaat.


To make Samosa Chaat you need two main ingredients : Samosas and Chole.

How to make Samosas ?

Boil potatoes and keep aside. Heat oil in a wok and add mustard seeds and curry leafs and let it splutter. Now add minced ginger garlic and chopped onions and saute it till the raw smell goes off. Add green chilies, peas and the spices and mix all together and fry for few minutes. Now add boiled and mashed potatoes and mix nicely with a spatula such that the flavors incorporate well. Fry for another few minutes till the spices and the potatoes mix well properly. Add fresh chopped coriander and mix well again. Turn off the gas and let the filling cool completely.

To make the dough , take all purpose flour and add 1 tbsp oil. Rub oil in the flour. Add ajwain, salt and water and knead into a medium dough. Cover the dough and keep aside for 15 mins. Divide the dough into 10 equal portions. Roll out each portion into about 6 inch wide diameter. Cut in half and make a cone and fill in the potato filling. Seal the edges by applying little water. Similarly make rest of the samosas and place them on a tray. Heat oil in a wok for deep frying and carefully drop samosas in batches of 2-3 at a time and fry in low to medium heat until golden and crisp. Collect the fried samosas on a kitchen towel to soak excess oil.

How to make Chole ?

To make Chole you first need to wash and soak chole over night or at least 7-8 hours till it rises and doubles. Add chole in a cooker along with salt, bay leaf, big cardamom, cinnamon stick and tea bags. Close the lid and pressure cook it till the chole softens. Collect the cooked chole in a bowl along with whole spices, discard the tea bags and keep aside. Heat oil in a wok and add chopped onions and green chilies, saute till the onions sweat and turns pink in color. Now add ginger garlic paste and fry till raw smell does off. Add in chopped tomatoes and saute till they ate mushy. Now add coriander powder, red chili powder, turmeric (optional), amchur powder and anardana powder and fry till oil starts leaving the sides. Now add cooked chole along with the water and mix well. Adjust salt again as per taste and let the curry boil. Simmer the gas and close the lid, let the chole cook for another few minutes till it thickens and oil starts oozing out. Sprinkle some garam masala powder and give a quick stir one last time. Turn off the gas  and keep aside.

Assembling of Samosa Chaat :

In a plate roughly break 1-2 samosas and add cooked chole all over. Now drizzle some whisked curd, tamarind chutney, green chutney on top. Add few drops of lemon juice, sprinkle some red chili powder, chaat masala powder and roasted cumin powder. Now add chopped onions, green chilies, chopped coriander and sev generously. You samosa chaat is ready to be served.
