Paneer Ghee Roast [Mangalore Style]

Mangalore Style Paneer Ghee Roast a polpular recipe from the state of Karnataka. It’s a spicy, tasty starter made with diced paneer , whole red chillies and ghee aka clarified butter, flavored with traditional ghee roast masala. An ideal party starter known for its spiciness, level of ghee with tender paneer cubes. Paneer ghee roast can also be served as a side dish along with Dosa, Paratha or Chapati.

GHEE ROAST MASALA

Manglorean Ghee Roast Masala is a blend of handpicked spices, roasted and ground to make a fine powder. Which is later used to make a paste either by adding water or curd and then used to make dishes with paneer, chicken, mutton or vegetables.

To make Ghee Roast Masala for one time use you need :

1 tsp ghee clarified butter


4 whole dried red chilli

1 tbsp coriander seeds

1 tsp cumin seeds

1 pinch methi seeds

½ tsp fennel seeds

½ tsp black pepper

4 clove garlic buds

2 tbsp tamarind extract

¼ cup water

To make masala paste, firstly heat 1 tsp ghee and roast dried red chill, coriander seeds, cumin, methi, fennel and black peppercorns . Dry roast until the spices turn aromatic. Now add garlic and saute slightly until golden in color. Let the spice mix cool completely, then transfer the mix into a blender and and add tamarind extract/pulp with some water. Blend to make a smooth paste and your masala is ready to cook.

How to make Paneer Ghee Roast :

Take 2 tbsp of ghee roast masala and add into 1/2 cup curd. Mix well to make a paste. If you already have a paste ready then skip adding curd. Heat ghee in a pan and gently fry paneer cubes until light golden in color. Transfer the ghee roasted paneer cubes in a separate plate and keep aside. Now add finely dry red chilies and curry leaves into the remaining ghee along with finely chopped onions. Saute till the onions sweat and raw smell goes off. Now add the masala paste into the pan and fry on high flame for few seconds. Now add paneer cubes in the masala and mix them all together such that the everthing incorporates well. Adjust salt as per taste and drizzle some ghee on top. Turn off the gas and your Paneer Ghee Roast is ready.

  1. Take 1.5- 2 tbsp ghee roast masala and add into 1/2 cup curd. Mix well to make a fine paste and keep aside.
  2. Heat ghee in a pan and saute paneer cubes until light golden. Transfer into a plate and keep aside.
  3. In remaining ghee ass red chilies and curry leaves, then add finely chopped onions and saute until raw smell goes off.
  4. Now add the prepared ghee roast masala paste in the pan and cook on high for few seconds. Add paneer cubes and mix well such that everything gets incorporated.
  5. Adjust salt as per taste. Cover lid and cook on low flame for 5 mins.
  6. Turn off the gas and drizzle some ghee on top. Paneer ghee roast is ready to be enjoyed as a snack or with parota or dosa.
