Hare Matar Ki Ghugni – UP Style Tea Time Snack

Hare Matar Ki Ghugni is a famous evening snack in North India and is enjoyed with a hot cuppa tea. This particular recipe comes from Uttar Pradesh and is also served as a street food that is affordable and a common man’s food as well. Its Vegan, gluten free and totally dairy-free snack recipe that is made with fresh green peas and potatoes. Sesoned with ginger, black pepper, salt and lemon juice, makes this snack a mouth watering dish that can also be enjoyed during breakfast and packed in lunch boxes too.

How to make Hare Matar Ki Ghugni ?

Heat oil in a pan (preferably non stick pan) and add cumin seeds and wait till it crackles. Now add grated ginger and green chilies. Saute till brown, add add cut potatoes and stir fry. Cover lid and cook for 3-4 mins until done. Add green peas and mix well. Season with some fresh ground black pepper , salt as per taste and drizzle lemon juice. Stir well and saute for another 5-6 minutes. Now add fresh chopped coriander, give a quick stir to combine and turn off the gas. Serve in a bowl, add some chopped onion and tomatoes on top. Garnish with mint leaves and enjoy this delicious evening snack with a hot cup of tea.

  • You can use fresh or frozen peas. If using frozen peas then keep them out of the freezer at least 30 mins before cooking and soak them in water too to retain their freshness.
  • I have added grated ginger but few people add chopped garlic as well. So it’s completely your choice, as in what to add. 
  • This snack is usually mixed with chopped onion and tomatoes, but you can also add chutneys of your choice and sev to make it even more tasty. 
  • This ghugni can also be used for making home style chaats.

What is Ghugni ?

Ghugni is an evening snack in Eastern India. Black gram, dried yellow peas, or dried white peas are cooked with gravy in the traditional eastern Indian style. It is then served with puffed rice and at times with hot onion pakoda or bhajiya. It is also served with poori. There is Bengali style ghugni made with dried white peas or safed matar, UP Banaras style ghugni made with kala chana, Bihari style Ghugni. 

Dried green peas Ghugni is another version of the very famous yellow pea ghugni from Bengal. The green pea ghugni is commonly made in parts of Bihar and is also known as Bihari Ghugni. Though this version is a bit dry as compared to the yellow ones. So if you are looking out for some wholesome filling breakfast or a side dish for your meal that is easy to prepare and require few basic ingredients that are easily available in your pantry, then this green pea ghugni is the best option. You can have it whole as a chat by adding some chopped onions, chaat masala, curd and tamarind chutney or can also be enjoyed with some bread. Find Recipe HERE


In Bengal, Ghugni has both vegetarian and non vegetarian versions. It is one of the most popular street food of Kolkata served with Poori aka Luchi. Some versions include meat, such as lamb. Mangsher ghugni has been described as a “Kolkata trademark”. Though my version is a veg one and was my lunch today. Had this amazing Ghugni with some whole wheat lachcha paratha.
