Moong Dal Kosambari is a quick, easy and a healthy salad from Karnataka. Made with cucumber and moong dal, this salad has many versions made with carrots, vegetables etc.

To Make Quick Moong Dal Kosambari :
Finely chopped cucumber mixed with grated coconut, chopped green chilies and soaked moong dal is then tempered with curry leaves and mustard. This salad can be served as a side dish as well. Its cooling properties helps keeping fresh and cool in summer.

- 2 Cucumbers finely chopped
- 4 tbsp moong dal soaked for minimum 2 hours
- 1-2 Green Chilies finely chopped
- 1 tbsp coriander finely chopped
- 2 tbsp Fresh Coconut grated
- 1 tsp lemon juice
- salt to taste
- 1 tbsp Oil
- 1 tsp Mustard seeds
- 4-5 curry leaves
Ingredients

- Soak moong dal for minimum 2 hours. Strain water and keep dal aside.
- In a bowl, add finely chopped cucumber,soaked moong dal, green chilies,grated coconut, coriander, salt and lemon juice. Mix well and keep aside.
- Heat oil in a pan and add curry leaves and mustard seeds, wait till they splutter and then add the tempering to the salad bowl.
- Mix everything well and serve cold along side with sabzi, dal. roti and rice.
