Hing Dhaniye Ke Chatpate Aloo

Hing Dhaniye Ke Chatpate Aloo is a popular vegetarian dish served in breakfast or as a side dish in your meal. Baby potatoes cooked with strong Indian spices is having strong flavors of asafoetida (hing) and coriander is best served with hot and fluffy Puris. The strong flavor of coriander is acquired by using whole coriander seeds, coriander powder and also fresh coriander leaves in garnish. Hing Dhaniye ke chatpate aloo is a perfect blend of flavors where spices are measured and tangyness comes from dry mango powder and lemon juice. I made this recipe almost a year back for ITC FARMLAND ever since i have been thinking to update this recipe. I had also been getting requests from my fol,lowers to get this particular recipe uploaded in my blog, hence i thought to finally write down the recipe for my viewers and as winters are here it’s going to be easy to get baby potatoes and make this mouth watering recipe for your family and friends. How to make Hing Dhaniye Ke Chatpate Aloo ?

As the name suggests, the recipe has a prominent flavor of Hing and Dhaniya. In this recipe the potatoes get a pungent flavor of hing and a strong character by whole coriander seeds. To make Hing Dhaniye Ke Aloo first boil baby potatoes, cool, peel the skin off and keep aside.Heat oil in a non stick pan and add whole spices like dry red chili, mustard seeds, cumin seeds, coriander seeds, hing, curry leaf and let them crackle. Now add boiled baby potatoes, mix and saute. Season with salt, turmeric, red chili powder, garam masala powder, coriander powder and amchur. Mix well to combine and fry for 5-8 mins till oil starts leaving sides. Add some lemon juice and mix well. Saute till the baby potatoes are golden and looks lightly charred. Turn off the gas, add fresh chopped coriander on top and serve hot.

Serving Suggestions ?

This recipe is particularly made with baby potatoes to get the flavors well in every bite. Try using the smallest variety of baby potatoes so that the final dish gets better when served with hot puris, prathas, chapatis etc. As it is a dry veg preparation hence it goes well as a side dish in your meal, when served with rice etc.

How to make Hing Dhaniye Ke Chatpate Aloo in Multipot ?

To make Hing Dhaniye Ke Aloo first heat water in the multipot and boil baby potatoes, cool, peel the skin off and keep aside. Discard water from the pot and dry the pot completely. Now set the mealthy multipot in ‘saute’ and heat oil in the pot and add whole spices like dry red chili, mustard seeds, cumin seeds, coriander seeds, hing, curry leaf and let them crackle. Now add boiled baby potatoes, mix and saute. Season with salt, turmeric, red chili powder, garam masala powder, coriander powder and amchur. Mix well to combine and fry for 5-8 mins till oil starts leaving sides. Add some lemon juice and mix well. Saute till the baby potatoes are golden and looks lightly charred. Turn off the multipot, add fresh chopped coriander on top and serve hot.
