Instructions
  1. Boil baby potatoes, cool, peel the skin off and keep aside.
  2. Heat oil in a non stick pan and add whole spices (dry red chili, mustard seeds, cumin seeds, coriander seeds, hing, curry leaf) and let them crackle.
  3. Now add boiled baby potatoes, mix and saute.
  4. Season with salt, turmeric, red chili powder, garam masala powder, coriander powder and amchur. Mix well to combine and fry for 5-8 mins till oil starts leaving sides.
  5. Add some lemon juice and mix well. Saute till the baby potatoes are golden and looks lightly charred. Turn off the gas, add fresh chopped coriander on top and serve hot.
