Almond & Green Bean Quinoa Salad recipe is a fibrous gluten free, healthy salad recipe that can also be consumed as mains along with some grilled chicken. Many people think Quinoa is a grain but it’s actually a seed that belongs to the amaranth family. Easy to cook and goes along with almost all kind of regional flavors you wish to introduce with it.

WHAT IS QUINOA ?

Quinoa is gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids.. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. It is a flowering plant in the amaranth family, also an herbaceous annual plant grown as a crop primarily for its edible seeds; the seeds are rich in protein, dietary fiber, B vitamins, and dietary minerals in amounts greater than in many grains. To make this easy, healthy, gluten free Almond & Green Bean Quinoa Salad first ash and rinse quinoa nicely in water, drain and keep aside. Heat 2 cup of water in a pan and add quinoa and wait till it comes to a boil. Simmer the gas and cover the lid. Cook for 10 minutes til quinoa is soft and fluffy. Turn off the gas and let it rest and cool. Meanwhile steam green bean halves until just tender. Blanch Almonds, remove skin and cut into halves and keep aside. In a large mixing bowl add all the prepared ingredients. Season with salt, black pepper and lemon juice. Mix nicely and serve immediately.

Recipe Notes

 

Few pointers to make perfect fluffy Quinoa :

  • Wash the seeds 2-3 times in running water to remove impurities.
  • Always strain washed Quinoa using a fine sieve.
  • Soak the washed seeds for 10-15 mins before cooking
  • Always heat water before adding Quinoa.
  • Cook on high flames till it comes to a boil then simmer the flames and cook with lid closed for 10-12 mins or until cooked.
  • Add 1/2 tsp butter before turning off the flames and gently mix with a fork.
  • Spread the cooked quinoa on a flat bottom tray/plate so that they don't get sticky.
  • 1 cup Quinoa + 2 cups water = 2 cups cooked Quinoa
