Mexican Grilled Corn Cobs – Monsoon Snack/ Appetizer Recipe in Stove Top (Grill Pan)

Monsoon and snacks go along really well. Corn is one popular snack option during rains. Broil, grill, roast or steam it, corn never fails to amaze me with it’s amazing sweetness and chunky texture. Today i’ll be sharing a perfect Monsoon snack/appetizer that is a Mexican dish made using Corn Cobs grilled on stove top using a grill pan. Mexican Grilled Corn Cobs

Coming back to our recipe. Mexican Grilled Corn is basically a snack made using either fresh corns or the frozen ones. The corns are basically grilled in the oven until charred but here as we are using a grill pan i’ll show you how to make grilled corn in a grill pan on stove top. Like said before, its an easy recipe and gets prepared in merely 20-25 mins with simple ingredients usually available at homes. To make this Mexican delicacy all you need is corn cobs, if using the fresh ones then make sure you clean it well by removing the husk and silk nicely. Then you need a spice mix and for that you need 4 basic spices, red chili powder, garlic powder, roasted cumin powder and dried oregano. To give the grilled corns an extra creaminess we also need some plain mayonnaise and some shredded cheese to give some character to the dish. Finely chopped cilantro/ coriander for garnish and some lemon wedges to go along side. You can serve this lip smacking Mexican grilled corn with some flavored Greek Yogurt or any of your favorite dip. I like to enjoy it without any accompaniments as it’s already so creamy, smokey and cheesy which is absolutely okay to my palate.

So now to make grill corn, heat the grill pan on stove and place the corn cobs on it. Grill them from all sides until charred. Remove from pan and spread mayonnaise all over. Sprinkle the spice mix and shredded cheese generously. Garnish with chopped cilantro or coriander leaves and some lemon wedges before serving.

Instructions
  1. Clean corn cobs by removing husk and silk. You can also use frozen corns for this recipe.
  2. Heat the Kent Red Grill Pan on stove and place the corns on it.
  3. Grill the corn cobs from all sides until charred.
  4. Remove the grilled corn from the pan and keep aside. Turn off the gas too.
  5. In a small bowl mix red chili powder, oregano, cumin powder and garlic powder and keep aside.
  6. Now brush mayonnaise all over the grilled corn cobs and sprinkle the spice mixes on top.
  7. Spread the shredded cheese on a plate and roll the grilled corns on it such that the cheese gets coated all over. You can also place the grilled corns on the serving plate and sprinkle the cheese generously on them. It tastes amazing either ways.
  8. Now garnish the corns with some finely chopped cilantro or coriander and some lemon wedges along side before serving.
