We love vegetarian recipe specially that comes from various states and regions of India. Being born and brought up in a Bengali environment with neighbors around i always had a liking towards Bengali food and this is why my taste buds developed accordingly. The sroma of mustard oil, posto, panch phoron stil turns me on and make me crave for all the delicious food. Assamese Cuisine has some similar flavors when it comes to veg recipes. One such amazing veg recipe from Assam with some subtle flavors and rustic aroma is Bhendir Soosori. The mustard sauce gives a kick to your palate leaving a pungent flavor and aroma which is not just delicious but also makes you cave for more.

- 500 gms Bhindi (Lady Finger/Okra) cut to 1-inch (remove head and tail)
- 1 tbsp cooking oil Mustard or Refined
- 1/2 tsp Panch Phoran
- 2 Dry red chilli
- 1 Bay Leaf (tej patta)
- 1/2 tsp Turmeric Powder (Haldi)
- salt to taste
- 1/2 tsp Red chilli powder
- 2 green chillies slit
- 2 tbsp Mustard seeds (black or yellow, I used black), soaked for 20 min
- 4 tbsp water
- 1/2 tsp Turmeric Powder
- 1 inch ginger grated

- To prepare Assamese Bhendir Sorsori recipe (Okra In Mustard Sauce), soak mustard in water for 15-20 mins before cooking.
- In a mixer grinder, add ginger paste and turmeric powder with mustard and grind to make a fine paste. Collect the paste and keep aside.
- Heat oil in a kadai and add bay leaf and panch phoron and wait till they crackle.
- Now add okra or bhindi and fry.
- Add slit green chilies along with turmeric powder, red chili powder and salt to taste.
- Cook till the okra is semi soft and then add the mustard paste and mix well.
- Cover the lid and cook for another 5-6 mins in low flame such that the flavors incorporate well.
- Serve Assamese Bhendir Sorsori recipe (Okra In Mustard Sauce) with tawa paratha, steamed rice & dal.
