Mushroom & Olive Red Pesto Penne is a delicious pasta recipe that has flavors and character to make you crave more and more. Red pesto is a blend of flavourful sun-dried tomatoes and roasted red peppers, and is fantastically flavored through a big bowl of pasta or a tomato and mozzarella salad.

Mushroom & Olive Red Pesto Penne

A quick preview :

To make Red Pesto Penne firstly heat olive oil in a pan and add chopped garlic. Saute for few seconds until light brown. Add sliced mushrooms and fry for a minute or two and then add roughly chopped tomatoes & olives and cook for 2-3 minutes until soft. Now add the boiled pasta to the pan along with 1-2 tbsp of water and mix well with the mushrooms and tomatoes. Add in the red pesto sauce and stir gently to blend in the flavors. Season with salt and pepper and mix well to combine. Serve immediately.
