Winter season is all about having a variety of soups made with the best winter produce. Recently I got a bag bull of organic beet from my friend’s farm and ever since we’re enjoy all beetroot delicacies. Burnt Garlic Beetroot Soup is one of my personal favorite winter soup made with roasted beet and has a rustic aroma and flavor of burnt garlic which is perfect for this cold season.
To make Burnt Garlic Beetroot Soup :
Wash and peel beetroot and keep aside. Heat butter in a pan and add chopped garlic, saute them until dark golden and crisp. Now add chopped beetroots and saute them until aromatic. Add some water, just as much as you need to cook the beetroot. Close lid and cook until beet is cooked. Turn off the gas and let the beetroot cool completely. Now transfer the beet mix into a grinder jar and blend to make a smooth mix. Heat butter in a pan and add gram flour to roast. Once aromatic, transfer the beetroot mix into the pan and stir well. Let the mix come to a boil, simmer the gas and let it cook until desired consistency is acquired. Add rock salt as needed and sprinkle some sugar and lemon juice on top. Give a quick stir and turn off the gas. Strain the juice through a sieve and discard the impurities. Serve the beetroot juice in a bowl, garnish with some cream, fried garlic and coriander. Serve hot or warm.
Served with Nachos, Bread Sticks or simple Croutons this Burnt Garlic Beetroot Soup has all my heart and soul. The recipe is easy and require just a handful of ingredients that are readily available in your kitchen pantry. This quick recipe is a definitely a keeper and you can surely try it out in your dinner gatherings etc.
