The Bourbon biscuit sometimes referred to as a Bourbon cream is a sandwich style biscuit consisting of two thin rectangular dark chocolate–flavored biscuits with a chocolate buttercream filling. The biscuit was introduced in 1910 by the biscuit company Peek Freans, of Bermondsey, London, originator of the Garibaldi biscuit. The new name was taken from the European royal House of Bourbon. The Bourbon biscuit is the fifth most popular biscuit in the UK to dunk into tea. In India , Britannia makes original Bourbon Biscuits, though there are various other companies that make similar ones using different names.
Recently i came across one one of co-blogger Freda Sera Dias blog post of Home made bourbon biscuits, not just her pictures on the blog, but the recipe also fascinated me to try hands over it. As my son is a big time Bourbon lover and loves to take this biscuits for his break time in school almost daily, i just couldn’t skip making this. Freda has beautifully described the recipe in her blog and i followed her to the T. As i had never made this before hence, i kept myself restricted to what Freda did. Her recipe was easy to follow and had no scope for getting wrong. Handful of ingredients that are easily available in our house pantry and just a little labor results to this chocolate butter cream filled Bourbon biscuits that will definitely leave you craving for more.
For making Home made Bourbon Biscuit all you need is All purpose flour, fine sugar, cocoa powder, baking soda, some butter, pinch of salt and some milk to knead. The dough is then wrapped in cling foil and allowed to set in refrigerator for about half an hour. Later the dough is rolled out and shaped into equal sized rectangles and pierced with tooth pick to make those traditional impression. Baked till crisp, these biscuits are then filled with cocoa butter cream spread to make sandwich biscuits.

- 1 cup All Purpose Flour Maida
- 4 tbsp Fine Sugar / Powdered
- 1 tsp honey
- 4 tbsp Cocoa powder
- 1/2 tsp baking soda
- 4 tbsp Softened butter unsalted
- 1 pinch salt
- 4-5 tbsp milk for kneading
- 1/2 cup icing sugar
- 1 tbsp Cocoa powder
- 3 tbsp butter

- Sift flour, fine sugar, baking soda, salt and cocoa powder together.
- Add softened butter and honey and dry mix to make a coarse like texture.
- Add milk gradually and knead to make a firm dough. Adjust milk accordingly.
- Cling wrap the dough ball and refrigerate for 30 mins.
- Pre heat the oven at 180 degree C and meanwhile take out the dough from the fridge and place it on a dusted counter.
- Roll out the dough ball into a rough shape with a thickness approx 1 mm.
- Take a sharp knife and cut off the sides to shape the flat dough a rectangular.
- Again with the same knife cut the rectangular vertically that divides it into two half.
- Cut each half into equal sized rectangles and that should give you 20 biscuits that will make 10 sandwich biscuits later.
- Take a tooth pick and pierce at equal distance to give that original bourbon look, sprinkle some sugar granules and transfer them on a lined baking tray.
- Bake the biscuits for around 12-15 mins or till the edges start turning dark.
- Place the biscuits on a wire rack and allow them to cool.
- To make chocolate cream filling, combine icing sugar with cocoa and softened butter and whisk to make a smooth and thick filling.
- Once the biscuits are cool, take one slice and spread the filling on the bottom side of the biscuit with a butter knife.
- Place another biscuit, bottom side over the cream to make a sandwich biscuit.
- Following the same make more biscuits and store in an air tight box to avoid getting them soggy.
