Aamrakhand – Mango Shrikhand Recipe

by Shaheen Ali

Hello my beautiful friends! How have you all been? I know I’m posting after a long time as I was keeping away from blogging due to my other commitments followed by some health issues. Wanted to start blogging during Ramadan but then had to fly to Mumbai for a short vacation. Nevertheless I’m back and this time with one of my most favorite summer dessert recipe made with everyone’s favorite King of fruits….Mangoes!

Like I said I had been to Mumbai and a summer trip to Mumbai can’t be complete without getting back some superior quality Ratanagiri Alphonso Mangoes. This was for the first time I got them with me and believe me they are the finest quality and variety of mango you can ever have. Extremely sweet and pulpy, Alphanso mangoes aka Hafoos Aam are to die for.

Mango Shrikhand recipe is easy and gets ready in no time. The only task is to strain the yoghurt well so that no amount of water is left in it. This will help you getting thick and silky smooth shrikhand. You can also use ready made shrikhand that comes in cardamom flavour. All you need to do is, add mango pulp and blend all till smooth. Refrigerate for some time and then garnish and serve. Though I have made the yoghurt at home and here it is :

Collect yogurt in a fine muslin cloth and tie up tightly. Hang the tied yogurt to a tap such that the excess water from the yogurt drips down. You can collect the water and use it in curries etc. Let the process continue till 3-4 hours. Once you get the thick yogurt aka shrikhand chakka, open the cloth and collect the chakka in a bowl. Add powdered sugar as per the required sweetness, mango pulp and cardamom powder. You can also add saffron strands if you like. Blend them all together using a blender till smooth. Refrigerate the mix for another 30 mins before serving. Your aamrakhand aka mango shrikhand is ready to serve. Add spoonful of shrikhand in a serving bowl, top it with some mango pulp (if needed), add some chopped mangoes, cherries and garnish with a mint leaf. Serve chilled.
