  1. Collect yogurt in a fine muslin cloth and tie up tightly.
  2. Hang the tied yogurt to a tap such that the excess water from the yogurt drips down. You can collect the water and use it in curries etc. Let the process continue till 3-4 hours.
  3. Once you get the thick yogurt aka shrikhand chakka, open the cloth and collect the chakka in a bowl.
  4. Add powdered sugar as per the required sweetness, mango pulp and cardamom powder. You can also add saffron strands if you like.
  5. Blend them all together using a blender till smooth.
  6. Refrigerate the mix for another 30 mins before serving.
  7. Your aamrakhand aka mango shrikhand is ready to serve.
  8. Add spoonful of shrikhand in a serving bowl, top it with some mango pulp (if needed), add some chopped mangoes, cherries and garnish with a mint leaf.
  9. Serve chilled.
