Aam Panna – Raw Mango (Kairi) Panna

Aam panna is an Indian drink renowned for its heat-resistant properties. It is made from green mangoes and is light pale in color, and is consumed as a tasty and healthy beverage to fight against the intense Indian summer heat. I have been longing to make this refreshing drink from quiet a long time. It was a few days back when i went to my mother’s place and she handed me a basket full of raw mangoes that had fallen in a windy storm. Didn’t wanted to make pickles and all, so used few for making dal, chutney etc and kept some big ones for making Panna.

As it a great remedy of heat stroke also i decide to make the Panna concentrate in a large quantity so that i could store it and can use through out the summer. My son also loves to have it, so i am keeping a practice of giving him a glass of Aam Panna when he is back from his school or play. The sweet and tangy combination is just so amazing that each sip of it yummy and refreshing. The market/ shops in summers get flooded with variety of aerated drinks, but trust me no cool drink can refresh you as much as a home made Aam Panna can do. Make it, Drink it …Store it !!!

Basically there are two versions of making Aam Panna. One is Raw mangoes boiled or pressure cooked until soft and pulpy. Later mixed with spices and stored. Second is roast Raw mangoes until the inside pulp is soft and mushy, spice it up and store.

Roasted Aam Panna :

Wash Raw mangoes nicely, wipe it off with a clean kitchen cloth and roat it directly either on stove top or on earthen chulha. You can also grill it in oven until soft and pulpy. Let the roasted mangoes cool down completely. Peel off the mangoes and collect the pulp in a separate bowl. Discard the seed as well. Now in a blender, collect mango pulp, mint leaves, rioasted cumin powder, chat masala, black salt and sugar, Blend them all together to make a thick concentrate. Collect them all in a jar or a bottle, store it in fridge for future use. To make Aam Panna, add ice cubes in a glass, along with 3-4 tbsp of Panna concentrate and some water. Stir well and serve.

Pressure Cooked Aam Panna :


This is perhaps the most quick and the easiest method of making Aam Panna followed by most of us. Take washed raw mangoes and peel the skin using a knife or a vegetable peeler. Now add around 2-3 cups of water in a pressure cooker along with peeled mangoes. Pressure cook till 3-4 whistles in medium-low flame. Let the steam release completely and then open lid and you’ll find the mangoes turned pulpy. Let it cool and then carefully scarp all the pulp around the seed and discard the seed. Now collect the pulp in a jar or pan and add mint leaves, roasted cumin powder, black salt, chaat masala and blend them all to make a thick concentrate. To make Aam Panna, add ice cubes in a glass, along with 3-4 tbsp of Panna concentrate and some water. Stir well and serve. You can further store the concentrate in fridge and use whenever needed.

Instructions
  1. Wash raw mangoes nicely and peel the skin using knife or peeler.
  2. Collect the peeled mangoes sin a pressure cooker and add 2-3 cups of water. Close lid and pressure cook till 4-5 whistles in medium-low flame.
  3. Let the pressure release automatically and carefully open lid. Let the cooked mangoes cool down completely.
  4. Now using a spoon scrap off all the pulp and discard the seed. Collect all the pulp in a bowl.
  5. Now add sugar, mint leaves, roasted cumin powder, chaat masala and black salt. Blend them all using hand blender or you can also blend them in a mixer grinder.
  6. Collect the panna concentrate in a bottle or a jar and keep aside. You can store this in fridge for many days and use it whenever needed.
  7. To make Aam Pann, take a glass and add handful of ice cubes along with 4-5 tbsp of prepared concentrate and some chilled water. Stir well and garnish with mint leaf and serve.
