In my home, breakfast is a grand affair, we everyday sleep with a thought in mind that tomorrow we gonna start our day by eating this and that. Like any other foodie family, my family loves to explore new cuisines and one such latest stop is Parsi Food. There is something very unique about this cuisine, till now i have tried my hands on couple of Parsi main course recipes and loved the use of deep fried potato straws on almost every non veg curry they have. I mean who doesn’t like potatoes…well i love potatoes and eggs a lot. And when these two come together in a single frame, the outcome is amazingly gorgeous. Deep fried potato straws lined on a pan as a thick bed and topped with some eggs is sheer bliss. Absolutely filling and i bet if you have a bowl of this, you certainly don’t need anything else for the whole day.

- 2 cups Potato Straws Deep Fried
- 2 Eggs
- 1 Tomatoes Fine Chopped
- 2 tbsp coriander Fine Chopped
- 1 tsp black pepper Crushed
- salt as needed
- 2 tbsp ghee
Ingredients

- Deep fry the potato straws till they are crisp and golden. Strain on a kitchen towel and keep aside.
- Heat ghee in a pan and add chopped tomatoes and potato straws in it. Spread to make a thick bed.
- Sprinkle some chopped coriander and break two eggs over the potatoes.
- Sprinkle salt and pepper on eggs and close the lid.
- Cook in low flames till the eggs whites are fully cooked.
- Turn off the gas and serve the Sali Par Eedu hot with some Tea and Bread.
Place the fried potato straws generously on the pan and press it gently with a spatula before breaking the eggs on them. By doing this the potatoes will be dense and form a crisp pan shaped basket that will be easy to break while serving.
The eggs can be fully or partially cooked. You can keep the eggs runny if you want. That totally depends on ones personal preference.
