  1. Deep fry the potato straws till they are crisp and golden. Strain on a kitchen towel and keep aside.
  2. Heat ghee in a pan and add chopped tomatoes and potato straws in it. Spread to make a thick bed.
  3. Sprinkle some chopped coriander and break two eggs over the potatoes.
  4. Sprinkle salt and pepper on eggs and close the lid.
  5. Cook in low flames till the eggs whites are fully cooked.
  6. Turn off the gas and serve the Sali Par Eedu hot with some Tea and Bread.
Recipe Notes

Place the fried potato straws generously on the pan and press it gently with a spatula before breaking the eggs on them. By doing this the potatoes will be dense and form a crisp pan shaped basket that will be easy to break while serving.

The eggs can be fully or partially cooked. You can keep the eggs runny if you want. That totally depends on ones personal preference.
