Coconut Milk Stew is a popular veg side dish from Kerala that is typically served with Appam in breakfast. The light and filling stew is rich in nutrients and is rich digestive properties. If often seen that children these days are too fussy to have vegetables. Hence there are various fusion recipes that we can try at home and make our kids indulge into good and healthy food. One such brilliant fusion dish is Kerala Style Coconut Milk Stew with Pasta. Yes , its the regular spiral pasta cooked in stew and enjoyed by children a lot. The thick coconut milk gives the creamy texture to the pasta along with the vegetables. I used Del Monte’s Spirali Pasta but you can use Macaroni, Farfale etc also. It’s totally one’s personal choice.

- 1.5 cups pasta Boiled Del Monte Spiral
- 2 cups coconut milk Thick
- 1 carrot (chopped)
- 1/2 cup cauliflower Florets
- 1/2 cup Green Peas
- 1/2 cup Beans (optional)
- 1 onion Large (chopped)
- 3 - 4 Cardamoms
- 4 - 5 black pepper
- 1 inch cinnamon Stick
- 2 Chilies Green (slit)
- 1 tsp ginger Grated
- 1 cup water
- 2 sprigs curry leaves
- 1.5 tsps salt (adjustable)

- Boil pasta, strain and collect in a bowl.
- Heat oil in a wok and add pepper, cardamom and cinnamon and saute it for few seconds.
- Now add slit green chilies, chopped onions and grated ginger. Mix well and saute till raw smell goes off.
- Add all the chopped vegetables and stir again.
- Now add water and salt, cover the lid and cook at low flame till vegetables are soft and cooked.
- Now slowly start adding coconut milk on low heat, so that the milk does not curdle. Keep string and cook for another 2-3 mins at low heat.
- Once the stew starts to thicken, add boiled pasta and cook for another few minutes.
- Serve hot with appam or you can enjoy it as a soup as well.
