Yesterday I posted my first recipe made with Raw Papaya and today I decided to come up with my second recipe too as I noticed the raw papaya in my fridge had started turning black from a corner. So I just chopped off that portion and continued with my recipe which was suggested by Pooja from Yummy Diaries. You can also follow her on instagram @yummydiaries1. In a conversation with her, she randomly mentioned about one of her village recipe in the hills of Himanchal which is made using raw papaya and happens to be one of her favorite too. KACHCHHE PAPITE KE PARATHE that is made by grated raw papaya mixed with Indian spices and stuffed to make ghee roasted parathe/ Indian flat bread.

- 2 Cup whole wheat flour
- 1 Tsp salt
- 1 Tsp Oil
- 1 Cup Luke warm water To make dough
- 1 Cup Dry flour
- 1/2 Cup Pure Ghee
- 1 Medium size raw papaya Pealed and grated
- 1/2 Tsp ajwain
- 1/2 Tsp Red Chili Powder
- 1/2 Tsp Garam Masala Powder
- salt To taste
- 2 T sp Fresh Chopped Coriander

- Wash, peel and grated raw papaya and collect in a bowl.
- Add salt and mix well with a spoon and keep aside for 5 mins.
- By adding salt the papaya will leave some water. Take handful of grated papaya and squeeze it to discard excess water.
- Collect the squeezed dry papaya mix in another bowl and add rest of the ingredients mentioned above and mix well.
- Heat and iron tawa and meanwhile prepare a soft dough with whole wheat flour, salt, little oil and Luke warm water.
- Pinch a handful portion from the dough and flatten it to make a puri sized disk.
- Take 1-2 tbsp of the filling and place in between the disk.
- Collect all sides of the disk and seal them in the center and roll to make s ball again.
- Coat some dry flour on the stuffed ball and roll into a round paratha.
- Place it on the hot tawa and dry roast it from one side.
- Flip and dry roast the other side too.
- Now add some pure ghee in the center as well as from the sides too.
- Flip and fry the other side too till the paratha is nicely brown and crisp.
- Transfer it on a kitchen towel to absorb excess ghee.
- Serve it with your favorite raita or chutney.
