Hello friends, by now you all must have known that the year 2017 is specially reserved for my fellow bloggers who are willing to do a guest post for me. 2016 was a tough in terms of blogging, i migrated my baby twice and as a result i lost all my blog traffic and numbers which definitely affected my work and my approach for work. In 2016 summers i decided to move my blog from blogger to Cucumber town which was a great decision and i personally promoted CT on social media a lot, as a result many fellow bloggers approached me asking me about the migration process. One of them was SMITHA KALLURAYA. We had been connected with each other through Facebook and food groups since long, but Cucumber town was a major reason for both of us to start the interaction through chat. In September 2016 again our chat sessions took a hike …reason : cucumber town again! As the platform was shutting down permanently, many of us including me and Smitha were in a chaos. This was when we actually started discussing on stuffs like hosting, migration etc for hours and hours. The chats then took a leap to phone calls and gradually we became the best of friends.

Smitha is an amazing person, clean hearted and such a pure soul to be friends with. Extremely soft spoken and down to earth, her work speaks for her and her work is superlative in all terms. Her blog/website COOK WITH SMILE reflects the person she is and how much hard work and honesty she puts in all her post. A simple yet charming girl from South India who manages home, kids, household…still live up to her goals and passion is really commendable. I congratulate Smitha on her journey by far and though it was a collar coaster ride in between for both of us but never the less i’m happy as i got a friend for life!

“I am so excited about today’s post … my first guest post !!! It’s been 3.5+ years since i started blogging and somehow i have never done any guest post till now . Any way's i am very happy that finally in 2017 i am here with my first guest post for my dear blogger friend Shaheen . 2016 was a roller coaster year for me and Shaheen with 2 blog migrations … and it was when we connected . Since we both were sailing in the same boat .. we used to discuss about various pros n cons , choosing the host and various things related to blog .And the best thing i liked about her was she was frank and was happy to share . She is so full of life, very fun loving, and extremely talented !! She has become one of my blogging soul mates !!”

Coming to today’s recipe .. Instant Pumpkin Idli .. They are so aromatic and are apt for a busy weekday breakfast . Its one of a common Manglorean / Konkani dish . You can make both sweet and savory version of these idlis and both taste awesome but today i am showing only savory version . Traditionally these idlis are wrapped in banana leafs or turmeric leaves and later steam cooked. Aahh…When steaming these idlis, the whole house smells so divine especially if using turmeric leaf. But in cities, for day to day cooking, we have compromised and altered many traditional methods. So in this recipe too ,for convenience, instead of banana / turmeric leaf ,normal idli molds or cups are used. Of course it can’t beat the heady aroma infused from leaves , but there is no compromise in taste.

Pumpkin idlis does not require any fermentation. Also no soaking and grinding if you have rice rava in stock. Best part is it is so filling and healthy .Do try for sure and let me know what you have to say about them…Here goes the recipe..

Instructions
  1. De skin , remove the flesh and seeds of pumpkin . Grate them using a grater .
  2. Mix grated pumpkin, grated coconut ,rice rava , curd and salt in a mixing bowl .
  3. Allow to settle for 30 - 60 mins .
  4. In a small kadai or pan , prepare tempering. Add oil. When its hot add mustard seeds.
  5. When it splutters, add green chilli and curry leaves. Fry for 1 min. Switch off.Pour this tempering to the pumpkin idli mix.
  6. Add chopped coriander leaves. Add around 1/2 cup water and Mix well.. The batter should be just binding kind of.
  7. Heat water in a steamer. Grease idli molds with oil .Pour the batter into idli stand.
  8. Steam for 15 mins on medium flame.Prick a tooth pick,if it comes clean it means its done.
  9. Allow it to cool a bit and remove from molds using a spoon or knife.
  10. Thats its spicy Pumpkin idlis are ready to serve. Serve them hot with a dash of coconut oil and mango pickle / coconut chutney / coriander chutney / chutney powder.
