Coconut Cucumber Agua Fresca is a perfect cooler in summers and even in humid days. A healthy and a refreshing drink that my family loves to have on Sunday afternoons.

- 1 Cucumber (peeled and chopped)
- 1/2 cup Coconut milk - (second extract)
- 1 tbsp Lemon Juice
- 1/2 cup Sugar
- Mint - few leaves (optional)
- 1 cup Ice cubes
- 1 cup Water
Ingredients

- In a blender jar, add chopped cucumber, coconut milk, lemon juice and sugar. Blend all to make a fine mix.
- Add water and ice cubes and churn again.
- Pour the drink into serving glasses and add few ice cubes, cucumber and lemon slices and give a quick stir.
- Serve chilled !
