How about trying some fusion recipes today. One of my all time favorite cuisine that i love to fuse with Indian recipes is Mexican. Tortilla is a type of soft, thin flatbread made from finely ground wheat flour from Mexico. The sheet is often stuffed with veg or non veg snacks along with various dips and sauces and then wrapped and enjoyed. This fusion recipe id made with our desi onion pakora and green chutney wrapped in a tortilla. Nothing can be as blissful as enjoying rains with this amazing combo of tea and snack. I don’t know who invented pakoras but one thing i know is that its one of the most loved monsoon snack by Indians specially when we have some tea to get along….. bliss!
Finely sliced onion, pretty much in quantity in ratio with the flour batter is flavored with Indian spices and deep fried til they are golden and crisp. This crunchy snack has various versions and names at different corners of our country. Easy to make and perfect snack option if you have sudden guests at home. Now make it more interesting by wrapping it in a tortilla and impress your family and friends with your international cooking skills.

- 4 tortilla Wraps
- 1 cup Besan Gram Flour /
- 4 Onions Medium Size (fine slices)
- 1 sprig coriander (chopped)
- 1 - 2 Green Chili (chopped)
- 1 tsp salt
- 1 pinch cooking soda
- 1/2 tsp chili powder Red
- 1/2 tsp garam masala Powder
- 1/2 cup water
- 1 bunch coriander (chopped)
- 2 Tomatoes (chopped)
- 4 - 5 mint leaves
- 4 - 5 cloves garlic
- 2 - 3 Chilies Green (chopped)
- 1 tsp lemon juice
- 1/2 tsp salt (adjustable)

- Heat oil in a wok and mean while prepare the batter for pakoras.
- In a large mixing bowl, add besan along with salt, cooking soda, red chili powder, garam masala powder and dry mix all.
- Slowly add water and stir to make a thick flowing batter. Avoid forming lumps.
- Now add finely sliced onions and chopped coriander & green chilies. Mix everything nicely and keep aside. [Adjust salt as per taste]
- Check if the oil is hot or not by adding a small drop of batter into it. If the oil is hot, the batter will immediately rise up and fry.
- Now turn the gas flames on medium heat and drop spoonful of pakora mix into the oil.
- Fry them in batches and once the pakoras are golden and nicely crisp, transfer them on a kitchen towel to absorb excess oil.
- Collect all the ingredients in a mixer grinder jar, except salt and lemon juice.
- Grind to make a smooth and thick chutney.
- Collect the chutney in a bowl and add salt as per taste.
- Now add lemon juice and mix well.
- Serve with hot bhajiyas or pakoras.
- Place a soft tortilla on a clean counter or a plate.
- Line it with lettuce or cabbage leaf.
- Spread some green chutney in the center of the sheet over the cabbage/lettuce leaf.
- Place handful of onion pakoras and some more chutney on top.
- Fold in the bottom part and then wrap the sides of the tortillas so that nothing drips or fall off.
- Enjoy tortilla wraps with onion pakora and chutney hot!
