Festivities are all about making home made delicacies, especially a lot of sweets. We Indians definitely go high on sugar during festivals. Diwali is round the corner and I’m celebrating it by making plenty of home made sweets and desserts that I’ll be carrying along during my holiday trip as well. Kaju Katli or Kaju Barfi is one of the most decadent sweet made with richness of cashewnuts and garnished with edible silver leaf.
Many of us think Kaju Katli is difficult to make at home, but it’s actually very easy to make at home with just few ingredients available in your kitchen pantry. Today I’ll be sharing one of the easiest recipe of Kaju Katli that gets prepared in no time. Simple ingredients , a lil monitoring and some patience gives you this melt in mouth kaju katli.

How to make Kaju Katli :
Collect cashews in a mixer jar and grind to make fine powder. You can also sieve the powder and grind the lumps again. Basically you need very fine powder, so grind accordingly. Keep aside and meanwhile take sugar and water in a pan and cook on medium to low flame for 4-5 mins. Now add the powdered cashews to the sugar syrup and stir vigorously. Add cardamom powder and keep stirring until the cashew mix thickens and leave sides of the pan. Turn of the gas and grease or line a flat plate with ghee or parchment paper and transfer the cashew mix so that it does not stick to the bottom of the plate. Place another parchment paper on top of the mix and using a rolling pin, gently roll out the cashew mix evenly. Let the mix cool at room temperature. Garnish with edible silver leaf such that it sticks well to top. Cut the kaju katlis into equal sized diamonds using a greased knife of pizza cutter. Store kaju katlis is an air tight box.

You can also add few drops of saffron milk while cooking to make it Kesar Kaju Katli. This will also give a yellow color to the sweet.
