Spicy Jaipuri Veg Kofta is a delicacy from Rajasthani cuisine where minced/ grated vegetables are combined with Indian spices and peanuts to make fried dumplings and served in a spicy gravy flavored with curd and chili. Jaipuri Koftas are best served with Tandoori Roti or plain Rice. The vegetables can be grated or boiled before making koftas. I have used bread crumbs for binding but you can also use some Besan (gram flour) for binding the vegetables. If you mince the vegetables then make there is no moisture or water left in the vegetables and if your’re using beggies like cabbage or bottle gourd then grate them well and add some turmeric and salt to them and keep aside for 10 mins. By doing this, the grated veggies will leave their natural water which you can then squeeze out and collect aside. The recipe calls for spiciness but you can moderate it as per your own choice.
For making Koftas : Collect grated vegetables in a large mixing bowl and bind together o make a smooth dough. Pinch a lemon sized portion from the dough and roll to shape them into round koftas. Heat oil in a wok and gently drop koftas in batches and fry till golden and crisp from outside. Collect them all on a kitchen towel to absorb excess oil and keep aside.

- 1/2 tbsp Grated Carrot
- 3/4 cup Grated Cauliflower
- 1/2 cup Grated Potato
- 1/2 cup Green pes
- 1/2 cup Roasted and crushed peanuts
- 4-5 tbsp Bread Crumbs
- 2 tbsp cornflour
- 1 tsp Red Chili Powder
- 1 tsp Roasted Cumin Powder
- 1/2 tsp Garam Masala Powder
- 2 tbsp Fresh coriander leaves finely chopped
- Oil for deep frying
- 3 Big Onions minced or finely chopped
- 2 tbsp Ginger Garlic Paste
- 3-4 Green Chili
- 4 tbsp curd
- 1 tomato finely chopped
- 2 tbsp Coriander Powder
- 2 tsp Red Chili Powder adjustable
- 1 tsp Roasted Cumin powde
- 1/2 tsp Turmeric Powder
- 1 tsp Garam masaa powder
- salt as needed
- 2 Bay Leaf
- 2 Green Cardamom
- 3-4 Cloves
- 3-4 black pepper
- 1 inch Cinnamon Stick
- 1 tbsp fresh cream
- Few mint leaves
- 2 sprig Fresh Coriander finely chopped

- Collect all the given ingredients except oil in a large mixing bowl and bind together o make a smooth dough.
- Pinch a lemon sized portion from the dough and roll to shape them into round koftas.
- Heat oil in a wok and gently drop koftas in batches and fry till golden and crisp from outside.
- Collect them all on a kitchen towel to absorb excess oil and keep aside.
- Transfer the remaining oil in another pan. Collect extra oil in an oil container and keep aside to use in future.
- Heat the oil temper it with whole spices.
- Now add finely chopped onions and fry till they sweat.
- Add ginger garlic paste and fry til raw smell goes off.
- Now add slit green chilies and season with turmeric powder, coriander powder, cumin powder and garam masala powder.
- Fry the masala til oil leaves sides of the pan. Don't let the masala burn, to avoid burning add little water from sides and fry in medium flame.
- Whisk curd in a bowl and add it to the fried masala and stir well till everything incorporates well.
- You can now add more oil from the sides if required and let the masala cook for another 5 mins.
- Once the masala is fried well and oil oozes out from everywhere, add water to make curry. {Do not add water in excess, this will make the curry too thin and watery.}
- Adjust salt as per taste and let the curry come to a boil.
- Simmer the flames and cover the pan with a lid. Let the curry cook for another 6-7 min.
- Now take the fried koftas and gently slide in the curry. Turn off the gas and your Spicy Jaipuri Veg Koftas are ready to serve.
- Transfer the kofta curry in a serving dish and garnish with a swirl of fresh cream and add some mint and coriander to give a fresh look. Serve hot with Tnadoori Roti or Rice.

Hey! I made it yesterday. It turned out awesome. Bread crumbs were missing though. Couldn’t click the final dish as usual, my bad. But thanks, it is something different from the regular koftas, and best part was they are easy to make👏😀
