Purple cabbage and broccoli are two of my most favorite vegetables that i mostly use in my salads. They are appealing, colorful and also with great nutritional content. Salads is something that never goes wrong, just combine your favorite ingredients along with a nice dressing and toss them well. This purple cabbage and broccoli salad also goes well with an amazingly creamy and delicious dressing that makes it even more delectable.
Miso and orange dressing that combines with butter to give a buttery flavor and is then added to the vegetables and garnished with some slivered almonds and raisins.
Miso is a traditional Japanese seasoning produced by fermenting soybeans with salt and koji (the fungus) and sometimes rice, barley, or other ingredients. The result is a thick paste used for sauces and spreads, pickling vegetables or meats. High in protein and rich in vitamins and minerals, miso played an important nutritional role in feudal Japan. Miso is still widely used in Japan, both in traditional and modern cooking, and has been gaining worldwide interest (Wiki) Japanese Miso Salad Dressing is easily available in all leading online stores like Amazon.in
Typically, miso is salty hence there is no need to add additional salt in the salad.
For making this colorful bowl of goodness all you need is :
- 1 cup Broccoli, cut into small florets
- 2 cups Purple Cabbage, thin sliced
- 1/2 cup Slivered Almonds
- 1/2 cup Raisins
- 1/2 cup Green Onions, fine chopped
- 1/2 Red Bell Pepper, chopped
- 2/3 cup Orange Juice (canned)
- 2 tbsp Miso Paste
- 2 tbsp Butter
- 1 Shallot, chopped
- 2 tbsp Cannola Oil
For making salad : Add ingredients for dressing in a grinder jar and make a fine smooth paste. Mix all the ingredients for salad in a mixing bowl and toss them well. Add the orange miso dressing in the salad and mix to combine flavors. Garnish with some slivered almonds and refrigerate for 10 mins before serving.
