- 1 Ripe Mango pitted and diced
- 1 red bell pepper seeded and finely diced
- 1 Yellow Bell Pepper seeded and finely diced
- 1 Red Onion finely chopped
- 1/2 cup Fresh Coriander finely chopped
- Kosher Salt to taste
- Crushed Black Pepper to taste
- 1 lemon juiced
- Fresh Mint for garnish

- In a large mixing bowl, combine chopped mangoes, bell peppers, onion, coriander and some fresh mint.
- Season with lemon juice, kosher salt and freshly crushed black pepper and quick a nice toss.
- Let is sit for 10 minutes before serving. Garnish with some fresh mint and serve.
