Home made spring roll sheets

I love travelling, but never ever thought that travelling can become an issue to me as well, specially when it comes to gourmet cooking. Being married to a banker, i keep travelling and moving to places that does not provide me basic ingredients sometimes. As they say, necessity is the mother of invention! it perfectly applies in my life as well. Out of many such ingredients which i fail to source at time , spring roll sheet or wrappers in one. My son loves fried snacks, specially spring rolls. Few years back i could have easily sourced the wrappers as we were fortunate to live in a big city, but from past 3 years we have located our self to such places where is difficult to source one. Hence i started searching for a fool proof recipe that can be made at home easily and hassle freely as well. I stumbled upon a recipe by my fried Ruchi on her blog, thought it was a vegetarian recipe, but thanks to her for mentioning the egg version too. Followed her recipe to the T and Voila !!!! Ingredients :

2 cups all purpose flour

1 large egg

1 tsp salt

2 tbsp cornflour

4 tbsp plain flour for dusting

1/2 cup Cold water adjustable

Method :

Break egg in a bowl and whisk till its white and frothy . Keep aside. In a mixing bowl, add flour, cornflour, salt and whisked egg and combine together with a fork. Slowly add cold water and knead to make a smooth dough. Cover the prepared dough with a cling wrap and let it stand for an hour. Now pinch a small lemon sized ball from the dough and roll on a dusted counter to make a thin round sheet. You can also make a big sheet from the entire dough ball (as thin as possible) and then cut into round or squares shapes with a cutter. Choice is yours. Let the sheets sit uncovered for 10 minutes so that they dry. Flip them and again make them sit for 10 minutes to dry the other side as well. Cut 40 round or square pieces of butter paper and place them in between the prepared sheets and stack them alternately such that every sheet has a butter paper in between. Zip lock the stack and store them in refrigerator. You spring roll wrappers or sheets are ready to use whenever you want to make delicious snacks.

Instructions

Recipe Notes
