Pineapple Srikhand – Fruit Flavored Sweetened Hung Curd

I love dairy products, be it Curd, Yogurt, Paneer…etc. These days we easily get plain hung curd but I’m a bit old school and like to make one at home. Yogurt tied in muslin cloth and hung over night gives a thick and creamy hung curd, further whisked with flavors of your choice. We in India call it SRIKHAND. Plain Srikhand can be used as a base ingredient to make various fruit flavored Srikhands or various other desserts too. Today I’ll be sharing my most favorite Pineapple Srikhand made with fresh pineapple and plain base srikhand.

A dash of cardamom powder and generous amount of saffron is my take on Srikhand. I like to enjoy it fine cut fruits available in season. So, here’s my version of PINEAPPLE SRIKHAND topped with fresh cut pineapple and loads of cherries and some mint for the freshness. Wanna learn more amazing Srikhand recipes using fruit? How to make Plain Srikhand ?

Take fresh curd or yogurt and tie it in a muslin cloth and hang it near a tap or clean surface in your kitchen for atleast 8 hours or overnight. You can place a bowl beneath it to collect the water from curd and later use it to make butter milk or may be add in some curries or make dough out of it. The hung curd is now ready to be whisked. Take a hand whisk and add some powdered sugar as per taste and cardamom powder, whisk it until smooth and creamy. Refrigerate before serving.

How to make Kesar Srikhand?

Follow the same steps as done for plain srikhand. Meanwhile soak saffron strands in 1 tsp milk and keep aside. Once your hung curd is ready, add powdered sugar as per taste and soaked saffron milk and whisk it until it changes color and turns smooth and creamy. Refrigerate before serving. This version of Srikhand goes well with hot and fluffy poori.

How to make Pineapple Srikhand?


The process of making Pineapple srikhand is same like Mango Shrikhand aka Aamrakhand . Make hung curd at home or you may also get from store. Add powdered sugar as per choice, little cardamom powder and very few drops of Pineapple essence. Whisk to make a smooth and creamy srikhand. Refrigerate for atleast an hour and garnish with fine cut pineapple and some cherries before serving. Add a mint leaf for freshness and serve chilled.

Instructions
  1. To make hung curd at home, take fresh curd and tie in a muslin cloth. Hang in a clean dry place for atleast 7-8 hours or preferably over night. You can place a container or a bowl beneath to collect the water from curd and further use it in making curries etc.
  2. Collect hung curd in a clean and dry bowl and add pineapple essence and powdered sugar. Whisk with a hand blender until smooth and creamy. You can also add cardamom powder if you like the flavor.
  3. Add some cut pineapple pieces to the srikhand and give a gentle mix. Refrigerate to set and later garnish with pineapple chunks, mint leaf and some cherries to add beauty and color. Serve chilled.
