Paneer Shashlik

Cheers to good health! Grilled paneer shashlik is a perfect guilt free weekend recipe. Enjoy it as a snack or as a main course. Perfect appetizer which not just want to to crave for more but also leave you guilt free. specially for the weight watchers. Loaded with the goodness of cottage cheese and loads of vegetables, Paneer shashlik has two methods of preparation. Can be broiled in the oven or simply grill it in your grill pan on stove top. Paneer and vegetables when marinaded with curd, cream and the spices, infuses the flavors inside each piece that leaves you on an amazing flavor ride with exotic aroma. 


Paneer Shashlik can be an amazing starter or snack for your birthday parties or kitty parties. The grilling time can be adjusted as per choice. Some people like the vegetables and paneer a bit strongly grilled unlike me. All you need to do is regulate the timer of the oven. If to wish to grill it on stove top, just keep brushing oil on top and sides to get that crispy coat.

Instructions
  1. In a large glass bowl mix all the marinade ingredients together thoroughly.
  2. Coat marinade over the vegetables and paneer.
  3. Cover the bowl with cling wrap and refrigerate for 2 hours.
  4. Pre heat oven at 250 degree C for 10 mins.
  5. Take bamboo skewers and pierce in the marinated vegetables and paneer alternately.
  6. Place the skewers onto the wire grill cum barbecue tray on the top rack position, with the drip/crumb tray at the bottom.
  7. Set the oven to broil mode and broil at 250 degree C for 6-7 minutes, basting and turning the skewers every 2 minutes using mittens.
  8. Serve hot on a bed of basmati rice garnished with onion rings and cabbage julienne.
  9. To add more flavors to it, sprinkle some lemon juice and chat masala on top and serve with tangy coriander and mint dip.
