Palak Raita | Spinach Raita is a perfect accompaniment with pilaf or biryani. As it’s palak everywhere in my garden, these days I am using the green veggie to the extreme. My today’s lunch had lehsuni palak dal with zeera rice accompanied by this amazingly flavorful palak raita.
The recipe is easy to make and the ingredients can be easily found in your kitchen pantry. So let us just proceed to check the ingredients required and the process of making this amazing Palak Raita.

- 250 gms curd Fresh
- 3/4 cup Spinach - (finely chopped)
- 2 tbsp Oil
- 1 tsp Cumin seeds - (crushed)
- 1/2 tsp Garlic paste
- 1 tsp chili paste Green
- 1 tsp Mustard seeds
- Curry leaves - few
- Salt - as needed

- In a large bowl whisk curd nicely by adding little water to it as per your desired consistency. I prefer keeping the raita thick. Keep aside.
- Take a non stick pan and heat 1 tbsp of oil. Add crushed cumin seeds, garlic paste and fry. Now add finely chopped palak/spinach and saute it till the moisture from the spinach evaporates.
- Add green chili paste and fry for another few seconds. Turn off the gas and add the spinach mix to the curd.
- Mix all together nicely with a spoon.
- In the same pan, add 1 tbsp oil again and heat. Now add mustard seeds and cury leaves and allow them to sputter.
- Temper the curd mix and stir well. You palak raita is ready to serve.
- Serve immediately or you can even refrigerate it before serving !
