KAJU MALAI ICE CREAM (Sugar Free)
Summer is all about keeping yourself cool & hydrated. Couldn’t find a better option than a home made creamy ice cream made using my favorite Borosil products. With handful of ingredients you can now make this super delicious Kaju Malai Ice Cream at home.
Hack : Did you know you can perfectly scoop out ice cream using a tablespoon without any mess? Don’t have an ice cream scooper? No worries! Just dip your tablespoon in luke warm water and run through the ice cream inwards. Your ice cream will perfectly roll in forming a beautiful scoop…ain’t that simple!
This recipe is Sugar Free yet quite high in calories. Hence it wont qualify under healthy recipe category. As dates are being used as replacement of sugar, this ice cream is rich in texture and extremely creamy and delicious.
How To Make Sugar Free Cashew Malai Ice Cream : In a bowl soak whole cashews in luke warm water for 30 min. Discard water and add dates & soaked cashews in a grinder jar. Add half of the milk into the jar first and grind to make a fine paste. Now add the remaining milk, milk powder and fresh cream to the Cashew & Dates mix. Grind again to make a fine & smooth ice cream base. Transfer the mix in an air tight container. Add in some chopped cashews to the base and cover with a cling wrap. Close lid and freeze for 6-8 hours or preferably overnight for best result. Scoop out your delicious creamy Kaju Malai Ice Cream in bowls, garnish with some toasted cashew chunks and enjoy.

- 200 ml Full Fat Whole Milk
- 100 grams Seedless Dates
- 50 grams Chopped Cashews
- 2 tbsp Chopped Cashews
- 1/2 cup fresh cream
- 4 tbsp Milk Powder
