Egg Shoap is a famous Assamese Appetizer. Deep fried cutlets made with boiled eggs and potatoes flavored with Indian spices is a great tea time snack option and even makes an amazing party snack or tiffin recipe for kids.
This recipe comes straight from Assam where it is served as an appetizer with Tea or Coffee. Simple recipe with some extraordinary amazing flavors but as it is deep fried, it’s not at all advisable to the weight watchers. I made Egg Shoap a few days back and it was a hit in my family, hence i made it again but this time for some esteemed guests. So next time when you wnt to make some delicious appetizer to impress your people at home, try making Egg shoap, it’s easy and needs handful of ingredients that is easily available at homes.

- 4 Eggs boiled and peeled
- 4 Potatoes boiled and peeled
- 1 onion finely chopped
- 2 Green Chilies finely chopped
- 1/2 tsp Turmeric Powder
- 1 tsp cumin powder
- salt as needed
- 2 Eggs beaten
- 2 cups Bread Crumbs
- Oil for deep frying

- In a large mixing bowl, add potatoes and boiled eggs and mash them well together.
- Heat 1 tbsp oil in a wok and add onions and green chilies. Fry till golden in color.
- Season with salt, turmeric and cumin powder and fry for another 2 mins.
- Add the fried onion mix into mashed potato and egg and mix well such that the flavors incorporates well.
- Meanwhile heat oil in a wok for deep frying.
- Shape the egg and potato mix into round or oval cutlets.
- Dip them in beaten egg and roll over bread crumbs.
- Deep fry the cutlets till golden in color.
- Serve hot with evening tea or coffee.
