The word Satay is a modern Indonesian and Malay spelling of Sate , a dish of seasoned, skewered and grilled meat, served with a sauce. Satay may consist of diced or sliced chicken, goat, mutton, beef, pork, fish, other meats, or tofu/ paneer; the more authentic version uses skewers from the midrib of the coconut palm frond, although bamboo skewers are often used.
With paneer in hand i opted to go for a Korean Paneer Satay in which there is a wide use of basil in the peanut sauce that not just gives an aroma to the dish but even enhance the flavor of the regular
peanut sauce. Though the recipe has been improvised by me a bit as per my convenience …grilling part was substituted by simple microwave…but the flavors didn’t compromise with the original taste.

- 250 gms Paneer Tofu /
- 1 Maggie masala - pouch
- 1/2 cup Basil / tulsi leafs
- 6 Satay sticks
- 1 tsp Cooking oil
- 1 tsp Butter 9i used Amul butter )
- 1 tsp Garlic - (finely chopped)
- 1 tsp Green chilli paste
- 1 tsp Green Capsicum paste
- 3 tbsp Peanut powder
- 1/2 cup Coconut milk
- 1 1/2 tbsp garlic sauce Swet
- a pinch Turmeric powder
- a pinch Sugar
- Salt - as needed

- Cut paneer into long dices and keep aside.
- In a non stick pan / wok, heat oil and saute chopped garlic.
- Now add butter, green chilli paste, capsicum paste and peanut powder. Fry well for few mins.
- Add a pinch of turmeric, sugar, coconut milk and allow to cook on medium flame till the coconut milk thickens.
- As soon as the milk start to thicken add sweet garlic sauce and torn basil/ tulsi leafs. Stir well to make a creamy texture.
- Audjst seasoning with maggi masala and salt. Mix all together to blend in with the sauce.
- Now take the paneer dices and adjust them in the satay sticks.
- Dip the paneer cubes into the sauce and micrwave them in a microwave safe vessel at high mode for 2mins.
- After 2 mins turn the paneer cubes to the other side and again pour some sauce over them and microwave for another 2-3 mins.
- Serve hot with fresh green salad and peanut basil sauce !!!
