To make this easy and amazingly delicious, creamy Saffron Rice Kheer in Multi Pot all you need is a handful of ingredients from your kitchen pantry, a mealthy multi pot and 20 mins from your busy schedule. Like is said Multi pot comes with presets hence making recipes is super easy now….you don’t need to stand and monitor your food while it’s cooking.
To make Saffron Rice Kheer you need to first wash rice 2-3 times in running water, strain and keep aside for 10 mins. Use any regular rice you eat or basmati rice for that long grain kheer. Soak a generous pinch of saffron strands in 2 tbsp milk and keep aside. Try using good quality saffron that gets soaked quickly, or else you’ll have to wait for hours till you get that vibrant color. Meanwhile plug in your multi pot and turn on the ‘saute’ mode in normal. Once the multi pot is hot, add ghee. The ghee will immediately run around the sides, this means the multi pot is nicely heated. Add chopped cashews, almond and raisins in ghee and saute till golden in color. Turn off the multi pot by pressing ‘cancel’ button. Now add soaked rice to the fried nuts and give a quick mix , add milk, saffron soaked milk, sugar and cardamom powder and give a nice stir such that all ingredients incorporates well. Close the lid of the multi pot properly, turn the pressure knob to ‘sealing’ [ because we don’t want the steam to go out ] and press the ‘porridge’ mode. Its a preset button that is automatically set to 20 mins so you don’t need to worry about the time much. Once the kheer is done, the multi pot will turn off and let the pressure release by itself til the red knob pops. Carefully open the lid and give a nice stir to the kheer. Transfer the kheer into a serving bowl and let it cool before serving. If you like your kheer chilled, then refrigerate before you serve. Garnish with some saffron strands and rose buds before serving.
