Whenever i’m out for a dinner in a restaurant and want to order some soup…it has to be cream of fresh tomato soup! Winters are here and the markets are flooded with winter produce that are giving me serious cooking goals. Fresh red ripen tomatoes along with some red long carrots, blended together with plenty of cream and seasoning makes an amazing soup that is enough to pamper you in winter nights.
The recipe is easy and requires merely 2-3 main ingredients to make this rich, creamy, luscious tomato and carrot soup. I like my soups with croutons, well you may call me old school, but this is who i am! You may try it with some breads or even soup sticks to make it even more fancy. A perfect appetizer for your dinner parties, this creamy red soup is certainly a show stopper in my house and i’m going o make it more often now.

- 4 Big Ripe Red Tomatoes
- 2 Medium Carrots peeled & roughly chopped
- 1 Small Onion fine chopped
- 1 tsp ginger fine chopped
- 1 tsp garlic fine chopped
- 1 tsp Chili Flakes
- 2 tsp Black Pepper Powder
- 2 tsp Salt & Freshly Crushed Black Pepper adjustable
- 2 tbsp butter
- 1/2 cup fresh cream I used Amul Fresh Cream
- 1-2 tbsp cornflour
- Fresh Basil for garnish
- 1 cup Croutons

- Heat 4-5 cups of water and add chopped carrots in it and boil for 2-3 mins.
- Now add whole tomatoes in boiling water and turn off the gas. Cover the pan with the lid and let the tomatoes rest in hot water for around 20 mins.
- Now drain the water and collect chopped carrots and tomatoes in a bowl and let them cool.
- Once the tomatoes are cool, peel them and remove the eye with the help of a knife.
- Add boiled carrots and blanched tomatoes in a blender and make a fine and smooth puree. (Do not add water)
- Now melt butter in a pan and add chopped onions. Saute till translucent.
- Now add chopped ginger and garlic to the onions and fry till the raw smell goes off.
- Meanwhile mix cornflour in 1/2 cup of water and stir to break lumps.
- Add in the cornflour mix into the pan along with the tomato and carrot puree and stir well.
- Now add another cup of water and let the puree cook till it starts to thicken.
- Add salt, pepper powder and sugar as per taste and keep stirring.
- Once the soup is nicely red in color and thick as per your required consistency, turn off the gas and let the soup rest for a while.
- Now add cream and stir in well.
- Transfer the soup in bowls and dd some fresh crushed pepper on top along with a swirl of fresh cream and some crunchy croutons.
- Serve hot!
