Zebra Cake…. (My 100th Post)

by Shaheen Ali

9 months of blogging and my 100th post…feels great. The journey so far has been a learning experience that allowed me to explore and nurture my culinary skills. Initially baking was one of my weakest point, but gradually it became my strength. What can be a better way to express my happiness on my 100th post than baking a cake.

Zebra-striped cake made with patterns of vanilla batter and cocoa batter is one of the impressive looking cakes. It looks complicated to make but in fact its very easy to get the patterns.

I have been seeing this cake from a while in many blogs, websites and thought of giving it a try. The assembling was fun and the cake came out to be super light, spongy and delicious.

Let’s move on to the recipe…

Instructions
  1. Sieve the flour and baking powder together in a large bowl and keep aside.
  2. Powder the sugar in a grinder.
  3. In a large bowl, mix together eggs, sugar and beat with a blender until its creamy. Add milk, oil and continue beating until well blended.
  4. Slowly add this eggs-sugar mixture in the dry mixture along with vanilla essence and beat just until the batter is smooth and the flour is completely mixed.
  5. Divide the mixture into 2 equal portions. Leave one portion like it is and add cocoa powder to the second portion and beat until the cocoa powder is fully incorporated.
  6. Preheat the oven to 350F/180C. Grease baking pan with some melted butter and dust with some flour.
Now for the assembling part(mot important) :
  1. Add 3 tablespoons of plain batter into the middle of the baking pan. Then add 3 tablespoons of cocoa batter and pour it in the center on top of the plain batter. Repeat this until the batter is all done, do not stop and wait for the previous batter to spread, keep going.... as shown in the pics below.
  2. NOTE: Do not spread the batter or move the pan to distribute the mixture. It will spread by itself and fill the pan slowly.
  3. Once the batter is over, place the baking pan inside the oven and bake it for around 40mins.
  4. Do not disturb the cake while its baking, donu2019t open the over door at least the first 20 minutes or the cake will shrink and will not rise. To check if the cake is ready, insert a toothpick into the center. It should come out clean when ready. Remove the cake from the oven and let it cool.
