A true foodie is one who is open to eat anything and almost everything edible. One such foodie is my sister. Since childhood me and my sister has been the biggest food hogger in our family. Living in a metro for years often allows one to eat and explore new cuisines which is normally not so common at home. One of them is Gratin, which is a widespread culinary technique in which an ingredient is topped with a browned crust, often using breadcrumbs, grated cheese, egg and/or butter. Gratin originated in French cuisine and is usually prepared in a shallow…

Mornings are happy when breakfast is my favorite Idli with Sambhar. Idli is a traditional breakfast in Indian households. Idli is a savory cake that is popular in South and now throughout India . The cakes are usually two to three inches in diameter and are made by steaming a batter consisting of fermented black lentils (de-husked) and rice. The fermentation process breaks down the starches so that they are more readily metabolized by the body. To make idli, two parts uncooked rice to one part split black lentil (urad dal) are soaked separately for at least four hours. Optionally…

Bottle Gourd is the only vegetable i always disliked as a kid. Lately, the two dishes made with bottle gourd which i started liking and later fallen in love with were Lauki Halwa and Lauki Kofta. I have seen my mom making typical spicy gravy with lots of bottle gourd dumplings drowned in it. Since long i had been wanting to make lauki kofta in a rich thick creamy gravy. Today while hunting veggies in the fridge i came across a lauki and some left over fresh cream/malai and of course the cashew nut paste which i always keep handy…

One is either a vegetarian, a non vegetarian or an eggetarian! We have grown up learning ‘Sunday ho ya Monday, roz khao Ande!’ There are endless recipes made with eggs all over the world. In India eggs are happily served in breakfast, lunch, dinner and even on road sides in winter evenings. Something that heats up the body and is a rich source of protein as well. In our daily affairs we commonly make omletes, poach, sunny side up, half frys, srambled eggs or bhurji , boiled and sliced and egg curries. There are different styles of making egg curry,…

Makhni gravy is something to die for. Anything cooked in a makhni gravy makes it rich and delicious. After cooking, paneer makhni, aloo maknhi, gobhi makhni…it was now time for some kathal to go with the creamy gravy. Had lots of kabab mix left in my fridge box which i had made yesterday. So thought to go for some kathal ke koftas in makhni curry. The delicate koftas simply melt in mouth and gives a marvelous taste when combined with a creamy and silky makhi gravy with a mild aroma of kasuri methi. I teamed up this awesome dish with…

Dul Alu specifically belongs to Kashmiri Cuisine … The potatoes, usually smaller ones, are first deep fried, then cooked slowly at low flame in a gravy with spices. It is a popular recipe cooked in all parts of India but the most popular recipes that made a place in every house were Kashmiri Dum Alu, Punjabi Dum Alu and Bengali Dum Alu also known as “Aloor Dom” made in mustard oil. The Kashmiri Dum Alu has a specific taste and aroma of fennel and is made in a spicy gravy, whereas the Punjabi Dun Aloo has subtle taste with mild…

Tawa Paneer Masala is a blessing to all those mom whose children come up with a sudden demand of paneer without even giving enough time to cook. Something that can be made in a jiffy and kids will get a chance to intake paneer along with some veggies too. It can be made in a Tawa (as the name suggests) as well as in a kadhai too, depending on the availability of the utensil. Tawa paneer masala is one of the quick side dishes to accompany roti or rice and takes merely 15-20mins to prepare. The recipe of tawa paneer…

Highway on my plate tonight!!!! Who doesn’t gets fascinated by Dhaba foods… No matter where we go and eat, a 5star or a 7star, nothing can beat the rustic flavor that a dhaba provides our palate. I am not much of an aristocratic person…i loved to stick to my roots, the roots of India that defines my taste, my culture and my food. The Dhaba moves wherever a highway goes.” The first Dhaba was probably established soon after the linking of the cities of India by highways (national, state and village roads). Food served in Dhabas is wholesome and full…

Chole Bhature is an absolutely decadent treat that is a must-try if u are a Punjabi food lover … It is one of many Punjabi specialties. It is also something I cook less often. Only because of a personal preference for Rajma (red kidney beans). Over the years, I have tried many recipes for chole recipes till i had my very own recipe, that is a family pleasure now.

Gobhi / Cauliflower is the alone vegetable that makes my meal complete. Today as i skipped my lunch and was hungry late evening, i just thought to spice up my high tea with Chilli Gobhi. Cauliflower florets cooked with an oriental tang. Though it goes best with Noodles or Fried rice, i decided to have it as a snack….lol

Usually Malai Kofta is all about Paneer koftas stuffed with dry fruits and cream. But i thought of adding a lil twist in the koftas specially. Had few peas, one cauliflower and some beans left in my fridge. So just added them in the koftas to make it more rich. Interesting..? Malai kofta is ready to be served. Serve hot with Butter Naan or Tandoori Roti.
