For any mom the toughest job is to prepare new n fancy dishes to feed her children and make them happy. This morning as i were scratching my head as to what to make for breakfast and tiffin which my son wud love to have, a friend of mine Rajiv Iyer, suggested me with one of his humble quick fix recipe named Chill-o-Melt Bonanza ! The recipe not just sounded quick but was interesting, fancy looking and equally healthy. Though the recipe he shared to me was in a jiffy but i still managed to do justice to his creation….

Usually Malai Kofta is all about Paneer koftas stuffed with dry fruits and cream. But i thought of adding a lil twist in the koftas specially. Had few peas, one cauliflower and some beans left in my fridge. So just added them in the koftas to make it more rich. Interesting..? Malai kofta is ready to be served. Serve hot with Butter Naan or Tandoori Roti.
