  1. To make Mandua atta dough, combine all ingredients in a mixing bowl and gradually add luke warm water to knead to a soft pliable dough.
  2. Cover the dough with a muslin cloth or a kitchen towel and keep aside.
  3. As mandua atta is gluten free hence it’s not as elastic as regular flour. So for making rotis you need a plastic sheet to roll the dough into rotis.
  4. Pinch a lemon size portion of dough and roll into a ball.
  5. Spread a plastic sheet on the counter and place the ball on it and fold the plastic sheet to cover the ball on top.
  6. Roll out the ball to make medium size rotis. You may see the corner cracking but that is ok as we have sheet on both sides it wont stick or tear.
  7. Carefully remove the above fold of the sheet and gently remove the rolled roti and place it on a hot iron tawa.
  8. Roast from both sides till brown spots appear.
  9. Brush some butter/ghee or oil on top and flip. Apply some bitter on the other side as well and fry till the rotis are crisp.
  10. Serve hot with any of your favorite chutney or curry. I chose to serve it with Aloo Tamatar Rassa aka Bedmi Aloo. You can find the recipe of it in archives.
  11. Add some more butter on top of the mandua roti while serving and enjoy.
