Instructions
How to make rice flour dough :
  1. Heat water in a pan and add salt and oil. Bring it to boil and simmer the flames.
  2. Now add rice flour and stir continuously to avoid forming lumps.
  3. Once the flour collects together and is lump free, close the lid and cook for another 7-8 mins on low flame.
  4. Turn off the gas and transfer the flour mix to a clean dry bowl.
  5. Grease your hands with oil or ghee and gently knead the flour mix to form a soft and pliable dough.
  6. Cover with a damp cloth and keep aside.
How to make dumplings :
  1. Heat water in a steamer and grease a plate that will go inside it.
  2. You can also place a banana leaf on the plate.
  3. Pinch small portion of the dough and roll to make marble size balls.
  4. Collect the all on the greased plate and place inside the steamer.
  5. Steam the rice marbles for around 15-20 mins.
How to make Kozhukattai :
  1. Heat a non stick pan and dry roast peanuts, curry leaves, cumin, dry red chili, coconut slices. Collect them all in a grinder jar and allow it to cool. Now grind to make a coarse mix.
  2. Heat oil/ ghee in a non stick pan and temper with Hing, cumin seeds, mustard seeds and curry leaves.
  3. As soon as they crackle, add the steamed rice flour marble balls and saute them for 2 mins.
  4. Add turmeric powder and salt as needed and saute again for a couple of minutes.
  5. Now add in the coarse mix into the pan and stir such that everything incorporates well.
  6. Squeeze some lemon juice and give a quick mix again.
  7. Serve hot with fresh curd or any of your favorite chutney.
Recipe Notes

  • Sieve rice flour if store bought.
  • You can use any refined oil or ghee. Though sesame oil gives an amazing aroma to the dish.
  • You can add any variation to flavor as per your choice.
  • You can also use left over rice flour dough of Modak.
