Instructions
  1. Heat 1 liter of milk in a sauce pan. When it comes to boil, add orange juice, lemon juice and switch off the flame. Use a fork to whisk the milk so it helps to curdle.
  2. Strain the curdled milk using a muslin cloth and wash it under running water few times. Let it hang for 15 minutes till water separates completely.
  3. Add 1 tsp sugar, 1 tbsp all purpose flour and mix it properly .
  4. Next, knead the chenna with the flat portion of your palm so the sugar melts properly and you get a smooth paste.
  5. Make small balls and keep them aside. The size will double when you cook them. Hence, be careful not to make it too large.
  6. Bring 1 liter of water and 3 tbsp of sugar to boil in a saucepan.
  7. Add the chenna balls and cover and cook for 10 minutes approximately. The chenna balls double up and it ready to be used after it cools down.
  8. Heat the remaining milk in another pan on a low flame.
  9. Add cardamom powder, saffron and cook till it reduces to almost half the volume.
  10. Add sugar and cook for another 2 minutes till sugar dissolves well.
  11. Add the chenna balls to it. Don’t add the water which was used for cooking Chena.
  12. Switch of the flame and add orange color and orange essence to it.
  13. Once, it cools down, add chopped pistachios, dried rose petals and cut orange pieces.
  14. Let it chill down before you serve.
