  1. Peel and cut raw papaya into small cubes. Wash them nicely and keep aside.
  2. Heat 4 cups of water in a pan and add papaya cubes in it. Boil for 6-7 mins till papaya turns translucent.
  3. Strain and collect the semi cooked papaya cubes in a bowl and keep aside.
  4. In a flat bottomed pan add 2 cups of sugar and 3 cups of water and let it come to a boil till sugar melts.
  5. Now add the semi cooked papaya cubes and cook for 20 minutes till you get i string syrup.
  6. Turn off the gas flames and add vanilla extract and give a quick stir.
  7. Take three medium size bowls and divide the papaya mix equally along with the syrup. I made three portions because i had three colors. If you have more colors you can divide them accordingly.
  8. Take good quality food colors and add 1-2 drop each into the bowls. Now you have three different colored cubes.
  9. Let the colorful candied cubes rest for 12 hours so that the color gets absorbed well.
  10. Now discard the sugar syrup and collect the cubes in a kitchen napkin and gently press to absorb excess moisture.
  11. Take a wire mesh and spread the cubes all over and let them dry for another 2-3 hours. Once the fruit is dry it wont stick to each other.
  12. Collect them in a dry air tight jar and store in fridge for further use.
Recipe Notes
  • You can add as many colors as you want to make them look more colorful.
  • Always store these candies in a cool dry place or in fridge.
  • To increase the shelf life try storing it in fridge.
  • Avoid using wet spoon or wet hand inside the jar.
  • Use these candied cubes as dessert toppings or make some cakes or cookies.
