Instructions
In a pan melt 1 tbsp of butter. Add washed and drained basmati rice into it and stir until it is well coated.
Add 2 cups of water and set the flame on high and bring it to boil.
Now reduce the heat to medium and close the lid and simmer the flames.
Cook the rice till the water is absorbed and the rice is soft and tender.
Remove from heat, uncover, and fluff with a fork.
Now in another pan heat the remaining butter. Add the corn kernels, shallots, sugar, and a pinch each of salt and pepper.
Keep stirring occasionally to prevent burning, until corn and shallots are soft and tender, about 5 minutes. Remove from heat.
Now combine rice and corn mixture in a large bowl. Add mint, and give a quick toss. Add salt and pepper to taste.
Serve Hot !!!
