Saffron Rice Kheer in Multipot

  1. Wash rice 2-3 times in running water, strain and keep aside for 10 mins. Soak a generous pinch of saffron strands in 2 tbsp milk and keep aside.
  2. Meanwhile plug in your multipot and turn on the ‘saute’ mode in normal.
  3. Once the multipot is hot, add ghee. The ghee will immediately run around the sides, this means the multipot is nicely heated.
  4. Add chopped cashews, almond and raisins in ghee and saute till golden in color.
  5. Turn off the multipot by pressing ‘cancel’ button.
  6. Now add soaked rice to the fried nuts and give a quick mix , add milk, saffron soaked milk, sugar and cardamom powder and give a nice stir such that all ingredients incorporates well.
  7. Close the lid of the multipot properly, turn the pressure knob to ‘sealing’ [ because we don’t want the steam to go out ] and press the ‘porridge’ mode. Its a preset button that is automatically set to 20mins so you don’t need to worry about the time much.
  8. Once the kheer is done, the multi pot will turn off and let the pressure release by itself til the red knob pops.
  9. Carefully open the lid and give a nice stir to the kheer. Transfer the kheer into a serving bowl and let it cool before serving. If you like your kheer chilled, then refrigerate before you serve. Garnish with some saffron strands and rose buds before serving.
