Instructions
In a mixing bowl add finely chopped eggs, chopped onions, mayonnaise, green pesto, salt and pepper as needed. Mix all to combine.
Take one slice of toasted brown bread. Add spoon full of egg pesto mix and spread all over. Place another slice of bread on top and serve immediately.
Recipe Notes
You can line a spinach leaf or lettuce on top of the egg salad in the sandwich.
Cut into four bite size portions and serve as an appetizer in your parties.
