Devil Eggs – Beetroot Stained Boiled Eggs With Toast & Salad

Instructions
  1. Hard boil the eggs, keep aside to cool.
  2. Meanwhile heat 1 cup of water and add 1 cup beetroot pieces to boil.
  3. Cool and puree it in a mixer grinder. Collect the puree in a jar or bowl and keep aside.
  4. Peel the egg shells and drop the eggs in the bowl of beetroot puree such that the eggs are fully immersed. Keep aside for minimum 30-35 mins.
  5. Once the eggs are nicely stained, remove them carefully and slice into two half.
  6. Scoop out the yolks and collect in a mixing bowl and add rest of the ingredients and whisk to make it still and creamy.
  7. Take a piping bag and add the whisked yolk mix in it and pipe it on the center hollow of the egg pieces.
  8. Sprinkle some chili flakes and grated cheese on top and serve with toast, salad and juice.
